CUCUMBERS (Athyonidum chilensis family (Holoturoidae)

HARVEST PERIOD
Main extraction period is from
March to November.
There is no close season, but
when Seaweeds and Abalone extraction starts, the sea-cucumber
production decreases. That is, from December to
February.
2- PROCESS:
Seacucumber will be processed in an authorized
plant, certified for the Asian market.
Product
will be: gutted, boild for 45 minutes, cleaned and decorated, warmed for
30 minutes, salted at 25% and dehydrated

as per customers instructions.

3- CUTS:

(shorter time to dry) - less meat
- Anus (longer
time to dry) - more meat

(longer time to dry) - almost all its meat

COOKING:
Boiled at 100 Celsius for 45min,. 10
minutes cool down and warmed for 30 minutes more, in
salt drinking water (as per customers
instructions)
Flavor depends on used water
5- SALTED:
Seacucumber
will be salted 48hrs.and then dehydrated.

DEHYDRATED:
This process has to be done: natural
(sun) and at the plant.
We recommend the natural
way for the first 6 hours, and then to a plant that can regulate
moisture and heat to obtain a better final product.
7- MOISTURE
4 to 18.5% for
final product (or, as per customer request).

QUALITY:
The quality depends on the process and
not on the raw material.
